The culinary arts

The Draa Valley contains a rich popular culture in many domains, including traditional cuisine with dishes specific to each tribe corresponding to the occasion and the season. The kitchen is a space almost reserved exclusively for the woman responsible for preparing meals. Local cooking is distinguished by the use of "skad," a variety of spices consisting of a mixture of dried onion, cumin, and pepper. Only seasonal vegetables are used. Thus, in winter carrots and turnips abound, and in summer eggplant, tomatoes and onions are served.

  • mechoui
